Katayef is one traditional Egyptian dessert

Katayef recipe :
Sweet Syrup Ingredients:
-          3 cups sugar
-          1 ½ cups water
-          Lemon juice
-          Vanilla
Dough Ingredients:
-          2 ½ cup flour
-          3 cups water
-          ¼ ounce yeast (preferably powder yeast)
Filling:
-          Nuts
-          Raisins
-          (could be replaced with ricotta cheese (8 ounces) and 1 tsp cornstarch)
Syrup Directions:
1-      Dissolve the sugar in water in a medium saucepan.
2-      Add lemon juice and vanilla then bring to boil.
3-      Reduce the heat and let it slowly boil for 8-10 minutes.
4-      Remove from heat and put it aside.
Dough Directions:
1-      Mix the flour with the yeast.
2-      Add water to the mix, 1 cup at a time. Mix very well and avoid leaving any lumps.
3-      Cover it and let it rest for an hour in a warm place.
4-      Over medium heat, heat a skillet and start pouring little portions of the mixture one at a time to the centre of the skillet in round shapes.
5-      Leave it until the top is dry and the bottom is a little brownish.
Filling and Frying:
1-      Stuff the Katayef shell with equal little portions of the fillings.
2-      Start by folding the shell over the filling by making it into a semi-circle shape and pinch along the edges.
3-      In a medium saucepan, heat 3 cups of oil and then start frying the Katayef until golden brown.
4-      Add the hot Katayef in the cold syrup and serve immediately.
